Pork Chops and Sweet Potato Casserole

Serves: 6

 

6 pork chops
6 sweet potatoes
salt and pepper
½ cup brown sugar
1½ cups milk

Place a layer of sweet potatoes sliced crosswise in a greased casserole. 

  1. Sprinkle with salt and pepper and a little brown sugar; continue layers until casserole is full. 

  2. Heat milk and pour over potatoes just to cover them. 

  3. Place pork chops on top of potatoes, cover and bake at 350° F. for 1 hour. 

  4. Remove cover and season with salt and pepper. 

  5. Continue cooking, uncovered, until chops are tender and brown on top.
