Peanut Butter Soup

Peanut Butter Soup

 

2 tablespoons onion, minced
3 tablespoons butter
1 tablespoon flour
1 cup peanut butter
4 cups chicken broth
salt and pepper
1 cup whipping cream
1 tablespoon Madeira

Cook onion in butter until soft in 2-quart saucepan. 

  1. Add flour and cook, stirring, until smooth. 

  2. Stir in peanut butter, add chicken broth. 

  3. Season to taste with salt and pepper.

  4. Cook, stirring, over low heat until thickened and smooth. 

  5. Add cream.

  6. Just before serving, add Madeira.
