Fried Red Tomatoes

Just like the Fried Green Tomatoes, a treat from the folks in the South of the U.S.
4 tomato, firm ripe ½ cup cracker crumbs, finely ground 1 teaspoon salt ¼ teaspoon pepper ¼ cup olive oil
Slice tomatoes to a thickness of ¾-inch.
Combine cracker crumbs, salt, and pepper-mix well.
Add tomato slices and coat evenly.
Heat oil to 375º in a large skillet.
Add tomatoes and cook until golden on both sides. D
rain on a cooling rack and blot with paper towels.
Serve hot or warm.
