1 (16-oz.) can cut okra, drained
¼ cup onion, chopped
¼ cup green pepper, chopped
3 tablespoons butter
4 cups chicken broth
1 16 oz. can tomato
1 bay leaf, small
pepper
salt
⅓ to
½ cooked smoked sausage, cut into rounds
1 cup cooked chicken, diced
1 tablespoon parsley, snipped
3 cups hot cooked rice |

Cook and stir okra, onion and green pepper in butter over low
heat until onion is tender.

Stir in chicken broth, tomatoes and
bay leaf; simmer uncovered 15 minutes.

Season with salt and
pepper.

Stir in smoked sausage, chicken and parsley; heat through.
Serve in bowls over or under scoops of rice. |
