Donna's Thai Cucumber Salad

Donna uses 2 English Cucumbers and she actually uses more cilantro than she has in the recipe.
|
⅓ cup minced shallots ⅓ cup sliced green onions
4 cups thinly sliced cucumber, peeled & seeded ½ cup rice vinegar 2 tablespoons sugar or Splenda ½ teaspoon salt ¼ cup cilantro |
Combine all ingredients except the vinegar, sugar and salt.
Pour over the cucumber mixture, toss to coat and serve. |
