Czech Beef Stew with Gherkins

 

Someone said, "This is so DELICIOUS, you will never want to make "regular" beef stew again!"  I don't know about that but it is good.

 

4 slices bacon, cut 1" length
3 pounds beef sew meat
salt and pepper
8 ounces mushrooms, quartered
1 large sliced onion
1 tablespoon paprika
˝ cup burgundy
1 can beef broth
1 jar gherkin, small jar, sweet, cut in half
hot cooked rice

Fry bacon and remove. 

 

Salt and pepper stew meat and brown in bacon drippings. 

  • Set aside.

Sauté onion and mushrooms in drippings, adding 1 Tbsp. oil if necessary. 

 

Combine all ingredients except gherkins, bacon and rice in Crockpot and cook for 4 hours on high or 6 hrs. on low. 

  1. Stir in some flour mixed with water to thicken juice if necessary. 

  2. Stir in pickles and bacon. 

Serve over hot rice.
